Catering Education in High Schools

During a conversation with my niece yesterday, she commented that she had chosen 'Catering' as one of her chosen qualification options at her local high school. I was really heartened to learn this and commended her on a good choice.

However, I then learned that when she presents food for assessment and grading that the class is marked only on presentation value and not on taste, flavour, aroma or consistency. Obviously, I don't know the full grading criteria for this qualification, but I was left speechless by this omission of assessment criteria.

Can anybody comment or fill in the missing gaps for me please before I really get angry about this!?
