Baxters will be launching its new food service division at the show with cookery demonstrations using the company's new range of fruit purées and compotes developed specifically for the catering industry. The purées are available in four flavours: strawberry, mango, raspberry and blackcurrant; and the compotes in three: country berries (raspberries, strawberries, blackcurrants, cherries and blackberries); raspberry and blackcurrant; and strawberry. Neither purées nor compotes contain artificial preservatives, and both have an ambient shelf-life of six months.

Rollover
Rollover will be showing its branded hot-dog counter system for selling 90g German smoked sausages in 12in baguettes. The machine costs £375 and sausages are supplied in jars of eight or tins of 10 with a 12- to 18-month shelf-life. Birds Eye Wall's
Visitors to the stand will be able to taste the new Birds Eye Wall's Carte d'Or range of 20 ice-creams and eight sorbets. King prawn en papillote (right) is a 50g serving of king prawns marinated in soy sauce and placed on a julienne of sweet corn, asparagus, green pepper, coconut, tomato, lemon grass, ginger and parsley for steaming or microwave cooking. Haddock with a Champagne sauce consists of a skinless Scottish haddock fillet, filled with a Champagne sauce and white and red grapes, and coated in breadcrumbs ready to oven-bake or fry. A range of four Far Eastern prawn recipes in filo pastry make up the Oriental king prawn platter, and 70g portions of skinless and boneless cod or hake in a crispy coating are aimed as an alternative to fishcakes and fish fingers for children.

Baby Bakers are small baked potatoes with a savoury filling; Snackers are slices of baked potato grilled with various toppings; Lorritos are a crisp-fried blend of choux pastry and mashed potato; and Fritzeez are grated potatoes infused with various ingredients.
