Pho targets up to three London openings in 2011

Vietnamese-style restaurant chain Pho is planning to open two to three more sites in London over the next 12 months as it works towards opening 15 sites in the next four to five years.

Pho, which was founded in 2005 by Stephen and Juliette Wall, currently has five sites, four of which are in London, with one in Brighton. The Walls co-own the company with Tom and Ed Martin of pub firm ETM Group, who have a 50% stake in the business.

The news of the company's expansion plans follows the appointment of Tim Mills as operations director in September and Zoe Tindall as financial director earlier this year.

Stephen Wall, director, said: "Having the right management team in place is crucial to a successful and significant expansion. With Zoe and Tim on our team, we will have the experience needed to grow quickly and continue to run a successful restaurant group."

Mills was previously responsible for growing bread and pâtisserie chain Paul to about 20 sites as its head of operations and has also worked as operations manager for Carluccio's and Krispy Kreme. He will now act as operations director for Pho. Meanwhile, Tindall has previously worked at both Yo! Sushi and Be At One.
