US restaurant group Samba Brands Management is to open a second restaurant at the Heron Tower in the City of London this summer.
The group, which will launch Sushi Samba across the 38th and 39th floors of the tower next month, will also open Duck & Waffle on the 40th floor in August.
Inspired by "broad European and British influences", the restaurant will be open 24 hours a day serving an all-day menu from breakfast through to dinner and a late-night menu from 2am to 6am.
Daniel Doherty will head up the kitchen at Duck & Waffle, having previously worked at the Old Brewery in Greenwich, the Empress in Victoria park, and the Ambassador in Exmouth Market, all in London. Front of house will be overseen by general manager Jason Goddard and restaurant manager Gavin McGowan Madoo.
CetraRuddy is designing the interior, which features wraparound floor-to-ceiling windows overlooking the City, an open kitchen, a 24-seat chef bar and a private dining room.
The decor features modern materials such as stainless steel and frosted glass juxtaposed with old world elements such as white marble, rustic metals, weathered wood and ceramic tiles.
Typical dishes will include foie gras "all day breakfast" with home-made Nutella and jam, fresh brioche, pork dust and Rice Crispies; Duck & Waffle with fried duck egg and mustard maple syrup; and home-made black pudding with gooseberry chutney.
The all-day menu will be served from 11am to 2am, including dishes such as Old Spot pork pie with smoked quails' egg; bacon-wrapped dates with linguiça sausage and endive salad; British seafood pot roast with n'duja and wild sea vegetables; lamb sweetbreads with broad beans and smoked bacon; and fourme d'ambert Eccles cakes. From 2am to 6am the restaurant will offer a late-night menu, featuring roasted Galloway veal marrow bones with ox cheek marmalade, pickled girolles and parsley.
After Sushi Samba, which will serve a blend of Japanese, Brazilian and Peruvian cuisine, Duck & Waffle will be the third outlet at Heron Tower after the Drift on the ground floor, which is operated by Drake & Morgan.
