Strom cod, lobsters and Orkney Rose kippers from Direct Seafoods

Premium Strom cod from Norway is sought after by chefs because of its thick marbled loins and its fine sashimi slices, and Direct Seafoods offers the sustainably farmed cod in limited numbers.
Because of the challenge of swimming against Norway's Saltstrommen tides, the cod grows quite large and has firm, yet tender, meat. It is mild, sweet, and slightly salty. Also available, the Cleanseas Australian Yellowtail Kingfish is farmed in open-ocean sea-cages in the Spencer Gulf, South Australia, and has a firm, pale pink broad-flaked flesh and sweet, rich flavour and supplied whole in 3-5kg weights.
The Clearwater Premium Hardshell Fresh Lobsters are harvested at their peak when the meat content is at its highest and the shells are at their hardest.
Seven sizes are available, from small Chix at 1lb (454-527g) to 23lb (931-1,362g) Selects.
