The funeral took place last week of DEAN SELBY, head chef of the Greenway hotel in Shurdington, near Cheltenham in Gloucestershire, who died of cancer at the age of 34.
General manager Andrew Mackay said Selby had been diagnosed with non-Hodgkin's lymphoma just five weeks earlier.
He went straight to Cheltenham General Hospital, where he died last month. He leaves a wife, Candice.
Mackay said: "Everyone at the hotel, and within the industry, is shocked and saddened by the untimely death of such a talented and popular individual.
"Dean and his kitchen brigade made the restaurant what it is today. Our thoughts are with his wife, family and friends."
Selby had worked at the Greenway for almost three years and had won the restaurant its three AA rosettes.
He and his brigade were working towards a fourth rosette, and the restaurant had just received its first inspection from the Michelin organisation.
He joined the Greenway from the Feathers hotel in Woodstock, Oxfordshire, where he was sous chef. Before that, he worked at Michael's Nook in Grasmere, Cumbria.
