Ken McCulloch of Glasgow's One Devonshire Gardens, who last year picked up Caterer's Hotelier of the Year award, has become one of eight new Master Innholders.

The others include: Gerhard Schaller of London's Montcalm hotel; Chris Rouse (above) of the Turnberry hotel; Anne Voss-Bark, the Arundell Arms, Lifton, Devon; Francis Young of the Pear Tree, near Swindon; Nicolas Ryan of Argyll's Crinan Hotel; Paul Henderson of Gidleigh Park, Devon; and Derek Picot of London's Sheraton Park Tower.

Jamie Holland of London's Lanesborough hotel has won the 1994 Master Chefs of Great Britain Sous Chef Competition, sponsored by the Shetland Salmon Farmers' Association.

In the cook-off he produced a menu of roast Shetland salmon on a fennel risotto with a warm salmon ragout, followed by brioche summer pudding.

booker prize

Entries are being invited for the 1994/95 Booker Prize for Excellence, an awards scheme recognising independent businesses.

The categories include best caterer, best pub, best hotel or guesthouse, best restaurant, best bistro or wine bar, best specialist caterer, best pub caterer, best chef/patron, best young business and best Scottish caterer.
