Fast-track lamb shoulder
Fairway Foods is moving further into the frozen sous-vide market with the addition of Shoulder of Lamb and Mint Gravy to its range. A 500g portion of lamb shoulder on the bone is slow-cooked to develop the flavour, then packed in plastic pouches along with a serving of root vegetables. Regeneration is to order in a matter of minutes whether in a hot water bath or in a microwave oven. For quicker service the pouches can be defrosted first, after which they will have a fridge life of seven days.
