cook on wood

Friday 30th January 2004 10:59

Cooking on wooden planks is the traditional method in the USA, where woods like cedar, mesquite, hickory or even oak from old wine barrels are used to infuse meats and fish with their smoky aromas.  And now you can do it too, with two types of gourmet cedar planks from Bakers Pride.  One is a plain flat board, measuring 20cm x 13.5cm, and the other is a depper, contoured platter, more suited for final presentation as an oven-to-table dish.  Both should be pre-smoked in water two hours before baking.

Price: From £2.46 per plank
