There's no right or wrong way to plan your management career, whether it's in pubs, hotels, contract catering or restaurants. The more academic among you may choose to do a hospitality degree followed by a fast-track training scheme with a big company. For others, it might be better to join the growing legion of companies that bring their own managers through the ranks. Rosalind Mullen reports
